Peanut-Butter Protein Cookies


"These are some of the best cookies I've ever tasted in my life," Pete said, happily nomming a cookie. A few minutes went by. "These are the best cookies I've ever tasted."

Don't be fooled! Peter's on a diet, and isn't the best judge right now... However, these are still a damn fine, soft-centered cookie. If you're into peanut butter, cookies, and / or protein snacks, these are the cookies for you. If you're having a lazy day, I heartily recommend them: they have only four ingredients, and can be made by the time your oven has finished preheating.

1 cup peanut butter
1/2 cup sugar
4 scoops vanilla protein powder*
1/2 cup almond milk

*(I used Sunwarrior)

Preheat the oven to 190 degrees, and line or grease a large baking tray.

In a small mixing bowl, combine the peanut butter, sugar, protein powder, and milk, until it is a smooth, dough-like consistency.

Use an ice-cream scoop to form the cookies, releasing, an inch or so apart, onto the tray.

Bake for seventeen minutes, and allow to cool.

I'm still getting into the habit of photographing every meal, which is harder than it sounds. I usually don't think about food until I'm hungry (and don't finish cooking food until I'm really hungry), which means I kind of wolf things down and then go, "Oh! A photo!" Fortunately, I'm able to take photographs of leftovers, such as the burgers, or pasta. Other meals weren't big enough, thus weren't so lucky. I'm glad that today was the first day I got a photo of every meal (repeats excluded!) Finally! Hopefully this is a precedent.
