
Man, oh man. Nothing beats macaroni cheese, and nothing beats an easy dinner. These have been combined to make an evil, lazy dish that is pure deliciousness. So, pull up a chair or stool to the stove, put on an audiobook, and start cooking.
1 250g packet GF macaroni pasta
2 small heads broccoli
1/2 cauliflower
1 cup soymilk
1 200g block soy cheese
salt & pepper
ground almonds or breadcrumbs (if baking)
Bring the pasta, broccoli, cauliflower, and milk to the boil, topping up with water to cover everything. Turn down to a simmer, and leave for twelve minutes, stirring occasionally.
Turn the heat up to medium-high, and crumble the cheese into the cooked pasta-vegetable mush. Season and stir constantly.
If baking, throw into a large dish, sprinkle with almonds, and bake at 180 degrees for twenty minutes.
