Sometimes I feel a little lazy in terms of preparing lunch just for me. Dinner is the easiest meal of the day, since I feel restricted in cooking for Pete, who can be quite picky (in a little kid sense), which means I have a clear sense of what he will and will not like.
Lunch for me usually consists of just a grilled salad sandwich, but I wanted to go a bit of extra effort, without going overboard and having a bunch of extra pots and pans.
Devising this simple meal was rather simple in itself. I had leftover rice, leftover beans, and some fresh spinach and tomato. The only preparation involved was opening a new can of sundried tomatoes, which we always have stocked, washing the vegetables, and a minimal amount of chopping.

Mediterranean Fried Rice
1 cup cooked and cooled brown rice
3/4 cup cannelini beans, cooked
1 whole tomato
3 tbsp sundried tomato slices (and oil)
2 handfuls spinach
A few dashes of herb salt
Wash the tomato and spinach. Chop the tomato into halves, then cut in a checkboard fashion, about 5mm apart.
Fry the tomato for a minute, and prepare the rest of the ingredients. Add the spinach, and fry for another minute.
Toss in the rice, beans, and sundried tomatoes. Cook until heated through, then add the herb salt to taste.
Serve, and enjoy!
