Sunday's Cooking Bug

It's a not-too-hot summer day, and all the better for getting up at noon. Our sleep schedule has nothing to envy, with us crawling into bed at 6am, and out again at 2pm. Pete stayed up all night to try and fix things, and has been fast asleep since the late afternoon, the poor guy.

I'm eating lunch while typing this (it isn't the healthiest - a grilled bubble & squeak, pickle, and soy cheese sandwich), and also flicking through cookbooks and food blogs for ideas for Christmas.
I am not sure whether I will ask to host Christmas, or help my mother-in-law with a lot of the grunt work, but I want some solid recipes to bring to the table. I'm also thinking of gifting people dairy-free or vegan loaves where appropriate.

As a result of having the flu / stomach virus for the last month (33 days, if you want to be exact!), I've been living on grilled sandwiches, canned soup, and microwave rice meals for a long time. As a result, I am once again catching the cooking bug, and I can't wait to have enough energy to get back into the kitchen!

If you are on the lookout for some recipes, these have caught my eye in the last twenty-four hours:

Quinoa-fritters-2

Head over to Veg Kitchen (here) for a lovely recipe for quinoa scallion fritters, or over to Martha Stewart's website for some spicy, crisp tofu or broiled black-pepper tofu (pictured below).

These veggie burgers are great too! This recipe has been tested a few times at our place, but we make it with gluten-free bread and no guac.

Also, curried pumpkin and peas and asparagus rice soup both sound delicious too!

Happy feasting!
