We've started doing a set food-routine and pre-determined menu, as half the battle is actually deciding what to make. Most nights it works, but there are obviously exceptions (i.e. running out of said ingredient too early, said ingredient no longer available in the store - Quron fajita strips, cough - , and just laziness or sickness).
Friday night is kabob night, which is pretty fine in my books!
Veggie Tofu Self-Assemble Kabobs - "recipe":
1 onion
1 zucchini
1 cup mushrooms
1 capsicum
300g hard tofu (we love it plain!)
Set of skewers (or just 1 per person)
1. Slice onion thinly and mushrooms, zucchini thickly, the capsicum into squares and the tofu into cubes.
2. Grill or fry the ingredients in batches until cooked (I do an onion mushroom combination, followed by zucchini and capsicum, then the tofu).
3. Arrange on plates, or toss back into the frying pan.
This is best served in front of the television, where everyone can casually make their skewers up while watching the Simpsons or Beatles movies (if you're into that sort of thing!)
