Chocolate Pudding

Chocolate Pudding (Vegan, Gluten-Free)


Ingredients


1 large block silken tofu (around 320g packet)


1 banana


1 - 2 tbsp of soy milk


1 tbsp cocoa powder or 1 tbsp chocolate protein powder


2 tbsp sugar


chopped nuts as desired


(brazil nuts pictured)


Blend the tofu, soy milk, powder, and sugar until smoothe, scraping down the sides if you need to. Spoon into mugs, champagne classes, or a large bowl, sprinkle the nuts on top, and serve.


Alternatively, this can be used to make a parfait. Spoon a layer of chocolate pudding, followed by nuts in repeating layers.
