Savoury Rice & Sweetcorn Porridge



I've been sick in the tummy lately, mostly due to carelessness (which Coeliac obviously punishes you for). This is a pretty non-offensive meal for both your tastebuds and stomach, making it a win-win meal in my books. While this would definitely be a great Winter meal, it's also perfect served a little bit above room temperature for a great Summer breakfast or lunch (just pop a small bowl in the microwave for thirty seconds).

1 tbsp oil (or water)
1/2 medium onion or 2 shallots, chopped
2 cloves garlic, chopped
1 whole broccoli, chopped
(Alternatively, two cups leafy greens)
2 cups frozen corn
Fresh herbs (thyme, basil)
3/4 cup rice
1 can creamed corn
1 cup soy or rice milk
1 tbsp powdered stock
Additional water (for topping up)
Pepper, to taste

In a medium-sized frypan with oil or water, fry the onion and garlic for a few minutes before tossing in the broccoli (or leafy greens). Fry the broccoli and onion for a few minutes, stirring frequently.

Add the remaining ingredients (corn, herbs, rice, corn, milk, stock, a little water), and bring to the boil. Turn down to a simmer and stir every few minutes for twenty-five minutes.

Remove from the heat, stir in the pepper, and serve.
