This isn't the healthiest dish, but it's quite tasty and comforting. I made this when the man had a trying day at work (and followed it up with chocolate cake for dessert). This serves two as a main, but is recommended as a side dish (serving four). This is a sinch to prepare when you haven't got much time, or want something a little extra. I threw this in the oven while making risotto (shown above).
5 potatoes, peeled
3 sweet potatoes, peeled
1/2 an onion, diced
300mL home-made stock
Preheat the oven to 200 degrees.
Thinly slice the potatoes, and layer in the bottom of a long, wide casserole dish. Sprinkle some onion over the top, and repeat.
When you've exhausted all the potato and onion, pour the stock over the top.
Cover with foil, and bake for forty minutes.
Leave to cool a few minutes before serving.
