Nutty Chocolate-Chip Protein Granola

I have been pretty obsessed with granola lately. Not only because it is on the healthy side (of unhealthy food, that is), but because it is just pretty darn yummy. I thought it was the perfect snack to take off to Mt. Annan for a daytrip this week.

3 cups rolled oats (GF)

3 cups puffed rice

4 tbsp butter (Nuttelex)

2 tbsp golden syrup (or agave, or maple)

1/4 cup raw cane sugar

1/2 cup flaked almonds

1/2 cup choc-chips

1 cup linseeds (or chia, or other small seed)

1/4 cup protein powder (I used Sunwarrior's vanilla)

Combine the oats and rice in a large mixing bowl.

On the stove, over medium heat, stir together the syrup, butter, and sugar. Allow to heat without boiling (remove at the slightest bubble).

Pour the syrup sugar mix over the oats and rice mix, and leave to cool for a few minutes.

Add the remaining ingredients, stirring and scraping the sides to thoroughly combine.

Leave to cool, and enjoy!

 

(I am eager to try out a variation with this... Replace almonds with sliced/chopped hazelnuts, and use chocolate protein powder instead. Mmm.)
