500g leftover mashed potatoes
2 cups raw cabbage (or mixture of cabbage and onion)
400g frozen mixed vegetables (broccoli, turnip, corn, carrot, peas, et cetera)
salt and pepper, to taste
3/4 cup rice flour
1 tbsp oil for frying
1) Fry the cabbage in the oil until tender and reduced. Add the frozen mixed vegetables, and cook until thawed.
2) Empty the fried vegetables into the bowl / saucepan containing leftover mashed potatoes, and mix to combine.
3) Add the flour, salt, and pepper, and mix thoroughly. Shape into hand-sized patties, and fry a batch at a time, turning them after four minutes.
4) Enjoy!
(Photo below is from when I first tried to coat them in flour, but pre-mixing the flour works much better, as I learned with the second batch)
