Chickpea-Millet Cakes

Chickpeamillet


Ingredients


1 cup uncooked millet


1/2 cup uncooked chickpeas, or 1 cup cooked


1 large onion, sliced or diced


1tbsp stock


Handful of parsley


3 tbsp flour (buckwheat + potato works well)


 


(if using uncooked chickpeas, soak overnight first and boil for at least half an hour before starting this recipe)


1) Bring four cups of water to the boil in a medium-sized saucepan, then add the millet, chickpeas, onion and stock. Simmer for fifteen minutes, stirring frequently.


2) Leave to cool slightly before mixing in the flour and parsley.


3) Grab a handful at a time, and shape into large patties.


4) Fry in batches, for three minutes each side.


Serve. They taste great on their own, but vegan mayonnaise suits the subtle flavours.
